5 – Japanese Fried “Rice”
Prep time: 15 min | Serve: 5 | Difficulty: Easy | Calories: 91kcal
Ingredients
- 1/2 head cauliflower
- 2 eggs
- 1 cup (75 g) of fresh snow pea pods
- 2 tablespoons (28 g) butter
- 1/2 cup (80 g) diced onion
- 2 tablespoons (16 g) shredded carrot
- 3 tablespoons (45 ml) soy sauce
- Salt and ground black pepper to taste
Directions
- Follow the steps to make Cauli-Rice from your cauliflower.
- While that’s going on, whisk the eggs and pour them into a nonstick pan (or one that’s been sprayed with nonstick cooking spray) over medium- high heat.
- Break the eggs up into pea-sized pieces with your spatula while they cook. The pan should be taken off the heat and put aside.
- Snip the snow peas into 1/4-inch (6 mm) lengths after removing the tops and threads. (By this time, the microwave has beeped; remove the lid from your cauliflower, or it will turn into mush with little resemblance to rice!)
- In a large pan, melt the butter and cook the pea pods, onion, and carrot for 2 to 3 minutes. Stir in the cauliflower until everything is fully combined.
- Stir in the soy sauce and cook the whole thing, often stirring, for another 5 to 6 minutes.
- Serve with a pinch of salt and pepper.
